MAGs, SGBs and metagenomic species
Custom reference database with 12,425 entries of enological enzymes was constructed by retrieving protein sequences from Uniprot (UniProtKB, release 2024_05; https://www.uniprot.org), selecting entries with enzymatic functions relevant to winemaking, including pectinases, glycosidases, cellulases, hemicellulases and glucanases.
