Innovative low temperature processes in food engineering

  • What it is

Mobility experience with a research focus

  • Who it’s for

    PhD sandwich; Post Doc

Department

Department of Industrial Engineering, University of Padova

Main research activities/topics/projects

Superunit Lab exploits the carbon dioxide at supercritical phase (above 31 °C and 73 atm) to pasteurize and dry food and biomedical products. Low temperatures allow to maintain intact the molecules and heat-sensitive components, which are degraded with the conventional thermal techniques.

The research projects where the candidate can be integrated regards the optimization of pasteurization and drying processes considering both microbial and qualitative aspects for a wide range of products.
