The project aims at studying the chemical composition of plants with medicinal and/or food interest, starting from the optimization of extraction procedure for the recovery of bioactive substances through green and innovative methods. A metabolomic approach will be used for the chemical characterization of plant extracts by liquid chromatography coupled to high resolution mass spectrometry (LC-HR-MS), as well as chemical fingerprint and quantitative analysis. Compounds will be isolated by fractionation of extracts through different chromatographic techniques and their structural elucidation carried out through spectroscopic analyses based on Nuclear Magnetic Resonance and MS techniques.
