SHORT DESCRIPTION: The Green House is a circular restaurant with catering and meeting functions. The pavilion, located near Utrecht Central Station, was rented for a maximum of 15 years and this makes the project necessarily temporary. However, this has given rise to an innovative entrepreneurial and architectural philosophy: the pavilion can be completely dismantled and, thanks to its modular design, will be rebuilt elsewhere, in the same or a different form, in 15 years. Even the equipment, materials and furnishings are rented, but remain the property of the supplier who, after the contract has expired, can reuse them, creating a model of absolutely circular economy.
KEY ACTIVITIES: the main activity of the project is obviously catering, a type of cuisine that respects the seasons, without artificial additives, with a low use of meat, attentive to the philosophy of Dutch cuisine traditionally characterized by healthy, creative and sustainable dishes. The dishes are prepared with vegetables and herbs grown on the urban farm, and each dish has its own sustainability indicators on the menu; guests choose not only their preference for taste and price, but also based on criteria of environmental morality: CO2 emissions, health and locality. One of the objectives of the kitchen is to reduce waste, the use of energy and water, with the ambitious dream of creating a "plug-free kitchen", that minimizes the use of electricity. In addition to the restaurant The Green House offers the possibility to rent spaces like meeting rooms and offices for meetings, conferences and business activities, ensuring the respect and sustainability that characterize the whole project.
