Restaurant De Kas

SHORT DESCRIPTION: De Kas is a catering experience totally based on a synergy between cuisine and nature, a synthesis between sustainability and good food. The restaurant is in the old greenhouse of the 1920S primary school in Amsterdam. It was to be demolished and has undergone a major renovation project. The products used to prepare the dishes come partly from the garden near the restaurant where vegetables, herbs and edible flowers are grown, while from the Beemster region comes another important slice of the products. Instead, meat, fish and vegetables not produced by De Kas are bought from some trustworthy suppliers. 

 

KEY ACTIVITIES: the restaurant is the activity on which all efforts are directed. The garden, the fields, the products are the elements that provide the activity a character of quality catering, careful to gastronomic innovations, but also to environmental sustainability. All the workers of the structure are engaged in the garden for the collection of the products at sunrise, in a way to present to the customers the maximum possible freshness.
